I fell in love with this blog post. Everyone can relate to it. I know that I have had a time or two where I order my favourite thing on the menu (or an extra item because I love it so much) while out with people who are supposed to be your friends. The second you do, you get that look :0 like ‘are you seriously ordering that right now’, or they come right out and say it ‘do you really think you need the LARGE fry?’. My response? Yes I fucking do and no I will not fucking share. BAHAHA

Meal Prep-Breakfast Time!

What do you eat for breakfast?

We all know that breakfast is the most important meal of the day. I am a savoury kind of girl so I love bacon and eggs. Or an omelette with sausage and mushrooms.

I was never one for breakfast. Even being diabetic I would adjust my insulin so that I didn’t have to eat it. It made my stomach hurt or feel sick if I ate but, knowing how important breakfast was, I tried to find a way to eat it anyways. What I realized was that if I wait until about 2 hours after I wake up, I can eat and not feel crappy and I am full for most of the morning.

Now I find that, without breakfast, I don’t have the fuel to get through the first half of the day. OR if I eat CRAP for breakfast I am starving before lunch is even close to being a possibility. By 10am I will be hungry and craving something like nobody’s business!

Greek Yogurt Parfait

  • ½ cup Vanilla Oikos greek yogurt
  • 1 tbs Vanilla protein powder
  • ½ cup Welch’s frozen strawberry/blueberry mix
  • ¼ cup Oats and Honey, Nature Valley Protein Granola

Mix the yogurt and the protein powder together FIRST. Once smooth, add in the rest of the ingredients. Also, you can use any frozen OR fresh fruit that you like.

Don’t get me wrong, its actually REALLY good. Its packed FULL of protein, low in carbs (35 in total), and low in calories. It keeps me full ALL morning and I don’t even contemplate snacking. The issue that I have started to find with this is…someone can only eat Greek yogurt SO MANY days in a row before they get sick of it! I am totally Greek yogurt’d out! 

Being so sick of this Greek yogurt breakfast I have been having, I decided to change it up. For me, breakfast has to be something I can either grab and go or can be put together at my desk. That being said I went ahead and made THIS:wp-1472068938369.jpg

Zucchini and Leek Frittata with Bacon

  • 8 eggs scrambled(I ate this for 3 separate meals)
  • 1 small zucchini
  • 1 small leek
  • 3 strips of bacon, already cooked

wp-1472068938368.jpgCook up the zucchini in a frying pan with a little bit of EVOO. Once the zucchini is browned a bit, throw in the leek and cook for another minute. Once the leek has started to get really fragrant, throw in the cooked bacon and then the scrambled eggs. I like to scrape the bottom of the pan a bit when the eggs first get in there. This makes sure that the eggs cook a little more even. Throw the whole thing in the oven on 350F, or even just a LOW broil, until the top of the eggs have set.

My daughter and I both had a bit for snack the night that I made it, and they served as my breakfast for 2 days with melba toasts on the side. I separated them into separate containers and just tossed them into the microwave for a minute or two when I was ready to eat them. They were SO good and totally helped by giving me a healthy break from my usual breakfast and giving me that savouriness that I crave!

MY New Year

I went to see my Endocrinologist (my doctor for my Type 1 diabetes) and my dietician last week. Neither of them were happy. Either not happy with me, or not happy with the way things have been going lately. There will be a lot of changes this coming year. Some changes are things that I should have been doing already but maybe had slacked off on for a while *cough* years *cough*. Some things are new, things that I knew in my heart of hearts but needed that official ‘doctor’s advice’ before really settling into my brain. I don’t make new years resolutions. These are changes that need to be made regardless of the time of year. It just so happened that I saw my doctors last week. It’s taken me this long (hence the dead blog space) to really wrap my head around everything. I don’t think I have it completely wrapped…but I am going to get there lol

As per my doctor, my blood sugar (A1C for those of you who actually speak diabetes) was elevated. I have never been one to have a good A1C. In my entire 21 years of being a type 1 diabetic I have only ever had 1 good A1C. But that is going to change (or so says my doctor). I have been instructed to test my blood sugars MORE (I usually fail miserably at this), get my blood work done every month and see a special diabetic nurse every 4-6 weeks. The thing that will be toughest for me will be the testing my blood sugar. I need to test 6+ times a day. Currently, I am lucky if I get in 2 tests a day and this is where I fail at being a diabetic lol. I am going to need to test my blood sugar upon waking up, 30 minutes before and 2 hours after every meal/snack, before bed, in the middle of the night, and any other time I am fasting (lol never) or just feel like it.  I am having a panic attack just writing this, but I NEED to do this. I NEED to wrap my head around it NOW because if I don’t, there is a good chance I will die a lot SOONER than later. There are so many health complications that come along with high blood sugars. They are scarey; I know, I have seen them first hand in other people. Also, once my blood sugars are more under control I will feel so much better and I honestly cannot wait for that. I have felt like shit for years but I have felt even worse in the past few months. This will help me immensely on my journey to a healthy me.

As for the meeting with my dietician and my journey to a FIT me…For a year I have followed the advice of my doctor and have been sticking to a 1200-1300 calorie meal plan in an attempt to lose weight. During this time I have lost an insignificant amount of weight and have stopped loosing altogether over the past 6 months. I couldn’t figure out why? I have been working out and eating as my doctor advised for a year. An entire year and I have lost a total of about 5 pounds compared to my weight at the same time last year. Luckily I went to see my dietician a few days later and she gave me some great news….I have not been eating enough. Maybe that’s not the great news. The great news would be the fact that I get to eat more food! WOOHOO She has set me up with a new meal plan of 1400 calories (more on workout days). The reason, she said, that I have not seen the weight loss that I wanted is 1) because as a type 1 diabetic it is very difficult to lose weight in general and 2) because my metabolism doesn’t have enough calories to work correctly.

I know not to expect a weight loss like most ‘normal’ people experience but I am HOPING *PRAYING* that I will see SOMETHING! Something that is going to at least push me a little closer to my smaller goals that I have set and eventually (in a few years) towards my larger goals.

I am not giving up. This is me jumping over a crack in the sidewalk of my journey. Wish me luck! I am definitely going to need it J

Yumm-O!

Diet. Diet is an aweful word. Its a FOUR letter word in our house, if you catch my drift. 😉  But diet in terms of what you eat, not necessarily being on a diet, is a huge part of a weight loss journey. At least it really should be. If you are not making a conscious decision to eat healthy(er) then, in my opinion, you are eating yourself to death.

I know that I was personally eatting myself to death. If I kept going the way that I was going I would die much sooner than I wanted to. For me, I make a consious decision to eat healthier every day. Its not easy in any way, in fact its Fucking difficult. Its hard. I dont always eat healthy 100% of the time. I still eat crap that I crave or just really want, but I make a consious choice of putting something into my body instead of doing it absent mindedly like I use to.

I track my calories EVERY DAY, even on my bad days where I just cant seem to fill up.  I have weeks (usually the week before my monthly visitor) where I just want to eat everything in site…and yes it happens. I dont feel too bad about it though because I still have to live my life. I dont want to feel like I’ve deprived myself everyday from things that I want. At the end of the day I still want to feel like I lived a life and really, truely ENJOYED it and that includes eating yummy food!

Anyways, I thought I would post one of my favourite recipes that I am in love with right now. If you know me, then you know that I am addicted to Pinterest! and I have a few boards dedicated to Healthy meals, healthy lunches, healthy snacks etc. Well I found this recipe at Home Cooked Memories and it is to die for! Baked Turkey Meatballs with Spinache.  They are so moist and flavourful that you would not even know that they are under 55 calories each!

I made a big batch and I froze them in a large ziploc bag. Now I just go in when I’m prepping my lunches and grab a few to throw in as my protein. They are amazing when you reheat them, they didn’t seem to dry out at all. This was my lunch today. I used 3 meatballs, 1 cup of Uncle Bens rice and 2 cups of steamed broccoli and cauliflower. You can make your rice or grain however you want, I just choose Uncle Bens for convenience.

Baked Turkey Meatballs with Spinach

Ingredients
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 garlic cloves, finely minced
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon dried thyme leaves
  • ½ teaspoon dried oregano
  • ¼ – ½ teaspoon crushed red pepper flakes (optional – adjust to your preference)
  • 16 oz frozen chopped spinach (defrosted, drained, and squeezed to remove excess water)
  • 2 tablespoons Worcestershire sauce
  • ⅓ cup chicken broth
  • 2½ lbs lean ground turkey
  • ¾ cup bread crumbs
  • 2 large eggs
Instructions
  1. Preheat oven to 400 degrees F. Prepare a large baking sheet by spraying with cooking spray. I actually line my baking sheet with foil and then spray with cooking spray.
  2. In a frying pan on medium heat, heat olive oil until hot. Then add onion, garlic, salt, pepper, thyme, oregano, and red pepper flakes. Sauté until onion is tender (about 5-6 minutes total time).
  3. Add spinach to pan and combine with onion mixture. Add Worcestershire sauce and chicken broth and mix well to combine. Cook until most of the liquid has cooked out (evaporated). I don’t have much liquid in my pan after I combine all these, but it will depend on how well you drained your spinach. Remove from heat and allow to cool to room temperature.
  4. In a large bowl, combine the turkey, bread crumbs, and egg. Add cooled onion/spinach mixture to the meat. I do all of this step with my hands, but you can use a spoon if you prefer.
  5. 5. With your hands, create meatballs that are about 1 – 1½ inches in diameter and place them on the baking sheet. Leave a little bit of space between each meatball. When you are done shaping your meatballs, you will probably have about 40-42 meatballs from this recipe. Don’t need that many? Freeze them after baking or cut this recipe in half (but I say freeze them and then you’ve done the work only once and have a future meal).
  6. Bake until your meatballs are cooked through with an internal temperature of 160 degrees F – which was about 20 minutes for my oven. Remove from oven and serve as desired.

Another Day, Another Beach Body Challenge

I joined another 30 day Beach Body Challenge this weekend. I know what your thinking…another one? Whats the point?

For me, the 30 day beach body challenges are more for accountability and short term goals for me. Im not loving the T25 Challenge group. The only reason is because there is almost no one in the group, or no one posting. Its boring. The 30 day challenges are great because there is usually a lot more people, who are all doing the same thing you are. Plus, I find the 30 days much less daunting than thinking about how Im going to be working out like this for the next 10 weeks lol. Also, I find myself more willing to write encouraging or motivational posts or ideas in the 30 day challenge which makes me more engaged in the group.

So anyways, my Beach Body Coach posed this question to us: What tools/tricks do you use to hold yourself accountable? What tools/tricks do you use to schedule your workouts, mealtimes, staying on track?

It’s not about time management, but self-management. And you’ll welcome the reward of a great many accomplishments—personal, professional, and physical.

My answer:

I don’t plan my times for workouts or family time etc. It’s hard for us because my daughter needs a less structured environment when it comes to home time and family time. That being said my daughter goes to bed around the same time every night (8pm ish). As soon as she is in bed lunches are made and a workout is usually done. Most nights these things are completed by 9pm. This gives me plenty of time to relax or do other house work before I go to bed.

An example of one of my prepped snacks for the week: 2 slices of oven roasted low-fat turkey breast and a cheese stick. This is great for after a workout of just a good way to get some extra protein in.

I have a ton of short term goals. I find that they are easier to attain and you feel motivation and gratification because you reach them so much quicker. It’s like having a light in the middle of the tunnel instead of way at the end lol. I have long term goals as well but those are a long ways a way and without my short term goals I believe I would get very discouraged.

The last, and probably most important tool, that I use is meal prep. Sundays are our grocery shopping and meal prep days. So we plan what we are going to have for breakfast and lunch and snacks for the week. After getting what we need from the store we go home and cook. I make a big pot of something or recipe that I found or always loved and make enough of it to last me the week. I separate it into individual containers for each day so that I can just grab it and go. I prep all my fruit and veggies in individual containers as well. I don’t think I would be able to make it through the week without eating out if I didn’t do this. All of my daughters snacks are prepped just like mine. So it only takes about 15 minutes each night to put the lunches together with all healthy servings!

Anyways, long post but those are my tools and tricks that get me through.

1 Week Down, 9 To Go!

Thank goodness that first week is finished. It was killer after taking just over 2 weeks off in-between challenges. My advice: NEVER EVER take that much time off in between workouts and think you will be fine…you wont be. It felt like those workouts were the hardest workouts that I had ever done, and I had done pretty much all of them before in my last challenge.wpid-20150520_212316.png

Thankfully, I got through 4 of the 5 days of workouts. Yes that does mean that I skipped 2 of the 6 work outs that were required but you know what? That is OK. I am easing back into it. I definitely could not have completed all of the workouts. I had one day that I actually fell asleep before my 7-year-old while we were watching TV. I was in bed by 8 that night lol. I also had a very busy weekend. Life gets in the way, and that is OK.

This week I hope to be able to complete all of the workouts. I’m not making any promises, but for now I plan to do them all.

I am also still on track with my meals. Meal prep is the only way for me to be able to eat healthy and really watch what my calorie and carb intake. For now, my lunches consist of 1 salmon filet cooked on the barbecue in a foil packet, 8 asparagus spears, and about 3/4 cup of wild rice blend. I have 3 lunches made so twpid-20150519_120729.jpghat I can just throw it into my lunch pail the night before and its ready to go in the morning. For breakfasts I am still having greek yogurt and berries. If i’m really hungry I have a hard-boiled egg in there and 1/2 a cucumber cut up. I find that if I don’t pack my lunch or my snacks, I am starving and I go out to eat. Fridays I don’t usually bring a lunch though. That is my day to eat out. 😀

I will post some more of the workouts that I’ve been doing and how difficult or easy I am finding them as I go.

Back on the Band Wagon!

Ok, so I need to get pumped again. Ive been dragging my ass for the past 2 weeks and enough is enough.

Monday Night Sweaty Selfie. T25 Cardio DONE!

Yesterday (Monday) was my first day of my new Beach Body Challenge.  It is a T25 specific challenge, but it is 10 weeks long and it features the entire program. I feel like I need these challenges to stay accountable. Without them, I just go off on my merry way and don’t force myself to work out. And right now, I literally have to force myself. I do not WANT to work out. It does not feel good or look good or make me feel all happy afterwards…no, it makes me kind of want to cry, or puke, or both. But guess what? I KNOW that I need to do this. I know that I will never get better, never loose this god forsaken weight unless I am giving it my all…and I am. I am now.

I am choosing (AGAIN) to do start this weight loss journey. Not that I ever actually stopped or gave up or anything, I just took a break that I shouldnt have. I figure, at least it wasnt a year long break like my last one, it was only 2 weeks. Next time, maybe it will only be 1 week, then no weeks.

This journey is for life. It is not a month, or wpid-20150519_082458.jpga year, or until I loose the amount of weight that I want to loose. It will become my way of life. It just takes time to form habits. Look how long I was eating like crap and not working out. It is going to take time to form this healthy lifestyle. Im not promising myself that I will EVER love to workout, or love eating fruit and yogurt for breakfast instead of eating a breakfast sandwhich from McDonalds….what I am promising myself is that it will be worth it.

Type 1- Part 1

Confession: I am a Type 1 Diabetic.

For those of you who do not know the different between Type 1 and Type 2 diabetes—and trust me most of you dont even if you think you do—Type 2 is the kind of diabetes that can be controlled with diet, excersize, sometimes medications are added if you cannot control your diet or excersize. Type 2 is USUALLY weight related or age related or a mix of both. Type 1 (the kind that I have been blessed with) is an auto-immune disease where my body decided one day to attack itself, specifically my pancreas, and shut down my ability to produce any insulin what-so-ever. Type 1 is not caused by being overweight, or from eating to much sugary foods. Type 1 and Type 2 are often confused as many people are not even aware that there are more than 1 type.

A little background:

I was diagnosed with Type 1 Diabetes when I was 6 years old (I still cant believe that I have had diabetes for 21 years!). I was on multiple insulin injections every day, had to watch my diet carefully and was always sick in someway or another. On injections, I was in the hospital 1-2 times a month because of bad blood sugars.

When I was 15 I was given the chance to get an insulin pump. This was the best thing that could ever happen to me as it helped keep my blood sugars under control and I was never hospitalized for my diabetes again.The pump allowed me to live like a normal human being, but since I had always watched what I ate so closely and been so restricted before, I started gaining a lot of weight being able to eat whatever I wanted.

I was young and stupid and am paying the price for those binge sessions now. But imagine going from eating whatever a 6 year old eats (loving candy and chocolate etc) to being restricted. Literally not being able to eat any of those things for years after you already know what they taste like. You know what your missing and you are a kid who just wants to have a damn chocolate bar. Now imagine you go from really not being able to have any of those amazing tasting treats (yes sometimes I had a piece here and there shh..) to being told its fine if you eat them now….ugh DUH! I ate the shit out of that food. I ate everything that was restricted in my diet. That is where my weight struggles began.

I have definitely changed my eating habits now and am watching my diabetes so much more closely. I have been since my daughter was born 7 years ago (the birth of a child will do that to a person lol). I dont often binge and I eat food that is so much better for me, and makes me feel better too. Although I DO NOT deny myself the simple pleasures that food brings to my life, I enjoy those pleasures a little more carefully and with a little bit more moderation than I did when I was a teenager set free to eat what I wanted.

Sometimes though, I get people who make assumptions, or follow stereotypes about diabetes. Often someone (a laymen of sorts) talks to me about my diabetes and they make comments like ‘thats the bad kind right?’. I also get comments like ‘stop eating so much sweets then’ or ‘well once you loose the weight you will be fine’, when in reality this has nothing to do with my diabetes. Yes, my blood sugars will get BETTER as I loose weight but my diabetes will NEVER go away.

No matter how healthy I eat, how much weight I lose, how active I am, my Type 1 Diabetes will never go away. Actually having Type 1 diabetes makes losing weight so much harder than those who do not have it.  The life saving insulin that I have to take everyday, all day, actually helps me to gain weight quite quickly and makes losing said weight nearly impossible. Isn’t that nice of it? lol

Anyways, I just wanted to shed some light on an issue that I deal with personally. This is Part 1, as I have so much information and did not want to make my post excruciatingly long 🙂 I am so thoughtful that way. Part 2 is mostly about the issues that I have while working out and eating with Type 1 Diabetes.

It’s A New Dawn, It’s A New Day, It’s A New Life…and I’m Feeling Good!

I cannot believe how great I feel today. I have energy and motivation to get my work done. I feel like I could go for a run right now and it is only 9 in the morning. This is unheard of for me, ESPECIALLY on a Monday morning.

This weekend was busy and full of running around to get ready for the baby showers and parties that are coming up in the next few weeks. I still managed to get some workouts done, eat healthy, and stay within, or even under, my calorie goals. SWEET! I still allow myself to eat regularly (yes I had leftover Pizza for breakfast one day and I had sausages for dinner one day) I just make sure to be completely honest with myself when putting these foods into my calorie counter. Its working pretty well so far 🙂

On Saturday I made a stupid move. I ate right before my workout. This was a HUGE mistake. We decided to do T25 Ab Intervals that night as well. I only got about 10 minutes into it and had to stop. My stomach was killing me, I felt weak, shaky, and very nauseous. Those supermans were my undoing; laying on my stomach, on the floor, lifting my arms and legs up. Well, needless to say, I threw up about 20 minutes later. 😦 Blech. Lesson learned? Never again will I eat right before a workout.

Tonight (Sunday) we did Cardio. I DID NOT eat for about two hours before and I was good to go. I made it through the entire workout and felt amazing afterwards. I still have trouble doing all of those squats though. My legs just want to give out! One of my new goals is to make it through an entire T25 Cardio or Speed workout without having to take any amount of breaks while doing squats! I think at the rate I am going that this will be a very manageable goal.

Our 30 day Beach Body Challenge is just about up. My next challenge will begin soon; T25 Focus 10 week program! I am so glad that I started this journey. Starting really is the hardest part! Now I need it. I am craving it! Its crazy really, but I know that this is still just the beginning to the rest of my life.
