Meal Prep Monday-Chicken Fajita Bowls

I LOVE Buddah Bowls…or anything that can be mixed into a big bowl of goodness. That is what inspired this dish and my Meal Prep for this week and let me tell you…these were AMAZING! I actually did NOT get sick of eating this AND I was sad when I had eaten them all. That’s saying something after eating them for 4 days in a row haha.

For breakfast I had 1 package of melba toasts with 2tbs of peanut butter spread between them and a piece of fruit, usually an apple or orange. The melba toast and peanut butter gave me the carb and protein that I need and the fruit is great for giving me a little more fiber and carb as well as balancing my meal and keeping me full longer. For lunch I had my Chicken Fajita Buddah bowls.

I had enough fixins left over for another bowl (minus the chicken) so I added 1/2 an avacado instead. YUMMO!

Ingredients:

  • 3 boneless-skinless chicken breasts
  • 1tsp Mrs. Dash Southwest seasoning
  • 1 jar salsa (I like mild but you can use whatever you want)
  • 1 LARGE red onion sliced in skinny strips
  • 2 bell peppers sliced in skinny strips
  • 3 cups (uncooked) Tru Roots Sprouted Rice and Quinoa blend
  • 1 cup frozen corn
  • Shredded cheddar cheese
  • Cilantro
  • Salt and Pepper
  • Cooking spray
  • 4 bowls or containers that can be put into the microwave to re-heat!

Instructions:

  1. Pre-heat oven to 400F or 200C
  2. Spray sheet pan with cooking spray and lay the chicken breast in the middle with the sliced peppers on one side and the onion on the other
  3. Sprinkle Mrs. Dash Southwest seasoning on both sides of chicken (add any other spices you may want) and salt and pepper on everything, including peppers and onion.
  4. Pour salsa, evenly, over the chicken breasts.
  5. Bake in the oven until the chicken is cooked through (about 25 minutes).
  6. While the chicken cooks, make your quinoa blend by following the directions on the package.
  7. Once everything is cooked start layering all of the items together in containers!
  8. To layer I start with my quinoa blend (1 cup) in each of the 4 bowls.
  9. Put ¼ cup of corn into each bowl on top of the quinoa.
  10. Divide peppers and onions evenly between the bowls and put them beside the corn.
  11. Then I slice up my chicken and divide that into the bowls.
  12. Top with a pinch of cheddar cheese and cilantro (optional).

These will keep for 4-5 days in the refrigerator so stack them up and grab 1 on your way out the door!

I feel like this looks like a lot of steps but I promise its not and it is SUPER easy! Like the easiest recipe I have made while meal prepping! Only 1 pan and 1 pot are used to make the WHOLE THING! You cannot beat that lol

MY New Year

I went to see my Endocrinologist (my doctor for my Type 1 diabetes) and my dietician last week. Neither of them were happy. Either not happy with me, or not happy with the way things have been going lately. There will be a lot of changes this coming year. Some changes are things that I should have been doing already but maybe had slacked off on for a while *cough* years *cough*. Some things are new, things that I knew in my heart of hearts but needed that official ‘doctor’s advice’ before really settling into my brain. I don’t make new years resolutions. These are changes that need to be made regardless of the time of year. It just so happened that I saw my doctors last week. It’s taken me this long (hence the dead blog space) to really wrap my head around everything. I don’t think I have it completely wrapped…but I am going to get there lol

As per my doctor, my blood sugar (A1C for those of you who actually speak diabetes) was elevated. I have never been one to have a good A1C. In my entire 21 years of being a type 1 diabetic I have only ever had 1 good A1C. But that is going to change (or so says my doctor). I have been instructed to test my blood sugars MORE (I usually fail miserably at this), get my blood work done every month and see a special diabetic nurse every 4-6 weeks. The thing that will be toughest for me will be the testing my blood sugar. I need to test 6+ times a day. Currently, I am lucky if I get in 2 tests a day and this is where I fail at being a diabetic lol. I am going to need to test my blood sugar upon waking up, 30 minutes before and 2 hours after every meal/snack, before bed, in the middle of the night, and any other time I am fasting (lol never) or just feel like it.  I am having a panic attack just writing this, but I NEED to do this. I NEED to wrap my head around it NOW because if I don’t, there is a good chance I will die a lot SOONER than later. There are so many health complications that come along with high blood sugars. They are scarey; I know, I have seen them first hand in other people. Also, once my blood sugars are more under control I will feel so much better and I honestly cannot wait for that. I have felt like shit for years but I have felt even worse in the past few months. This will help me immensely on my journey to a healthy me.

As for the meeting with my dietician and my journey to a FIT me…For a year I have followed the advice of my doctor and have been sticking to a 1200-1300 calorie meal plan in an attempt to lose weight. During this time I have lost an insignificant amount of weight and have stopped loosing altogether over the past 6 months. I couldn’t figure out why? I have been working out and eating as my doctor advised for a year. An entire year and I have lost a total of about 5 pounds compared to my weight at the same time last year. Luckily I went to see my dietician a few days later and she gave me some great news….I have not been eating enough. Maybe that’s not the great news. The great news would be the fact that I get to eat more food! WOOHOO She has set me up with a new meal plan of 1400 calories (more on workout days). The reason, she said, that I have not seen the weight loss that I wanted is 1) because as a type 1 diabetic it is very difficult to lose weight in general and 2) because my metabolism doesn’t have enough calories to work correctly.

I know not to expect a weight loss like most ‘normal’ people experience but I am HOPING *PRAYING* that I will see SOMETHING! Something that is going to at least push me a little closer to my smaller goals that I have set and eventually (in a few years) towards my larger goals.

I am not giving up. This is me jumping over a crack in the sidewalk of my journey. Wish me luck! I am definitely going to need it J

Putting on the Pounds

When I first began my fitness journey I told myself that I would be completely honest with myself and this blog. I told you that I was going to be completely honest as well. So I am here to tell you that I have gained 5 pounds back of my 11 pound weight loss.

This weight gain made me a little bit upset at first. How could I have gained 5 pounds in 1 week? Ive worked so hard, pushed myself during my work outs, even doing some workouts by myself. But, in all reality, it is my own fault. It was my birthday weekend. I let myself sit around and do nothing, eat junk, over indulge in drinks, cake, food in general, so I am paying the price.

Do I feel discouraged about gaining 5 pounds? Sure. Some of the weight is from over indulging, but some is from building muscle (or at least that’s what Im telling myself lol). Do I feel guilty that I had a lazy and crazy weekend? Absolutely not. I had so much fun with my family and my girlfriends last weekend that those 5 pounds were worth it. I need to be able to live my life and have fun doing it.

That being said, I am going to work my ass off this week!

We started back to our workouts full force last night, beginning with T25 Cardio. I dont know why but this cardio video is my absolute favourite of all the videos so far (and let me tell you, I hate cardio).

We were on the ball last night. We worked it hard. We were breathing heavy (panthing even) to the point where we could barely speak, sweat was dripping, and our hearts were pounding. There were times that our muscles pretty much gave up (those damn squats Im tellin ya!) and Im not going to lie it was hard as hell, but there was not one moment where either of us stopped moving. I had determination to get this workout done and to work as hard as I could through the entire thing and I did.  I am so proud of how hard we worked, how hard I worked.

Beat after T25 Cardio and lifting.

I was so determined yesterday that I was going to work out hard, that after the 25 minute Cardio I got out my weights and started lifting. I did a bunch of different excersizes to work out my arms as I have barely any muscle in that area. This wasnt necissarily an excersize for weight loss, but I also want to build muscle on this fitness journey and I feel that so far the videos have not helped me in the area of my upper body. Now I will tell you, I CANNOT lift very much. I had two weights weighing 3lbs each (yes only 3lbs each) and I could barely get through 3 reps of 10. Who am I kidding I could barely get through 1 rep of 10! But I lifted for another 25 minutes. I completed 3 reps of 10 for EACH muscle group in my arms/back/shoulders, which I thought was pretty good for the first time lifting :).

I cant wait to do this all again tonight. Maybe some Ab Intervals? Maybe some full body? We will see!

The Goals For My Future

I was asked a few simple questions today. A few simple questions that have made me realize that I have been lying to myself for a really long time. I was asked: What made you decide to loose weight now? Whats different from the last time you tried to loose weight? What are your goals and when do you think you will achieve them?

2 years ago, I got it into my head that I was going to loose 100 pounds in a year. Easy enough right? I was working out, mainly speed walking at the gym, when I started getting horrible pain in my feet. I later found out that I have arthritis, in my feet and knee, at the ripe old age of 25 (at the time). I also got a really horrible tissue infection in my right leg that left me down for the count for about 6 weeks. These were all really good excuses as to why I quit.

In all reality, I was scared shit-less. Scared of the pain in my feet and scared of infection returning to my leg. I never told anyone that until a few months ago. I think actually telling someone my fear is what really helped me decide that it was time to try again. Hearing myself say out loud “I am afraid” brought me to reality.

So I begin again.

My weight loss Journey.

Why now?

I am sick and tired of being fat! Being a BBW is fine, and I do love myself. I am beautiful, intelligent, strong willed and I have a killer personality but being fat sucks! I cannot do everything that I want to do in life, while I am in this body.

How long will it take?

This time around I put no time limit on my journey. It will take as long as I need it to take. Maybe three years, maybe it will never be over, and that’s OK.

My Goals?

I believe my goals will be ever changing. That is why my journey may never be over. But for now my goals are as follows:

1) Lead a healthy lifestyle.

This includes eating healthier (not any specific diet, I am still going to live my life, but just healthier choices), and getting active. This will help me, and hopefully set a better example for my daughter.

2) Loose 20 pounds.

This is my first actual weight loss goal. Once I reach it I will up the anti but for now…I am half way there!

3) Be under 200 pounds.

My goal weight is 150 pounds but I am not focusing on that just yet. Getting under 200 pounds will be a huge accomplishment as I have not been that weight since I was about 17 years old.

4) Be able to shop in ANY store I want.

This is actually a huge one for me. I have been shopping in plus size stores since I was 17, and paying the plus size price tag as well. I love that there are stores targeted specifically to plus size woman. There are even stores targeted to YOUNG plus size woman. But you know what? Im sick of being confined to a few stores that I can buy clothing at.

I am a young 20 something. I want to be able to walk into any store, try something on, and have it fit! I want to be able to be on trend and be able to go shopping where all of my girlfriends shop instead of dragging them to Addition-elle or Maurice or Penningtons for myself. I want to be able to buy what I want, from wherever I want.

5) Stop saying no to active play with my daughter.

I do this. I know every parent doeswpid-20150226_174802.jpg it at some point or another but I do it so often that my daughter no longer wants to do anything active, even if I suggest it. I feel like a failure in this aspect but that is going to change. We will get outside and do things together and I will no longer say no, or take no for an answer.

Why is this time different than the last?

I am sick of making up excuses as to why I ‘cant’ excersize. I am an able bodied person. It might take me double the time to do the same workout as someone half my size, I may have to modifty every single move for my arthritis and just because I am not up to that specific skill set or speed yet, but thats OK! Thats OK because Im not going to sit on my ass and watch my life go by anymore. I am going to get up and live it.

I AM IN.

Those are the three words that have started the ball rolling in the game that will save my life.

Confused? I bet you are. But for me this is the first time I am seeing with clarity.

I am fat. Actually I believe the technical term is ‘Obese’ or even ‘Morbidly Obese’. I am 5′ 7″ and weigh 230 lbs. I have approximately 70 pounds to loose to be at the top of what a doctor considers a ‘healthy weight’ for me.

I am a confidant beautiful woman, do not get me wrong. I am happy with my life. I have an amazing family, great group of friends, and a crazy little girl who has stolen my heart. But I want more. I feel like I deserve more in this life than I am letting myself experience. That I am ABLE to experience because of how heavy I am.

I AM IN.

I AM IN is what I had to say to get in on a 30 day beach body challenge that my coach was offering, for free, to a select few.  The challenge starts Monday and I am terrified.

I am terrified but I am ready! I am ready to take back control of my life. I am ready to work my ass off (or my stomach to be more exact) and get healthy. I know that there is a long road of blood, sweat, and tears ahead of me. I know that it is going to be unbearably difficult and at times I am going to want to give up. But I am done with this life. I am done with saying no to playing with my daughter because I am to tired. Done with getting winded running up a few flights of stairs. Done making excuses.
